The Sushi Factory Story
The Sushi Factory was a long time dream of The Fish Factory co-owners Andrew and Chris. Similar to The Fish Factory concept, it became apparent that the business could supply themselves with the highest quality produce to create sushi and sashimi and wanted to offer this to their existing customers.
Established in April of 2021, The Sushi Factory kiosk was built inside The Fish Factory's fresh market. A lot of time and consideration was taken to curate a modern yet authentic Japanese menu featuring sushi, sashimi and traditional Japanese meals made by professionals in the industry.
We look forward to you trying our menu, whether it's catering your function, enjoying take away or dining in our outside bistro area.
Our kiosk is open Thursday - Sunday from 10am - 4pm.
Our People
Behind The Sushi Factory sits a talented team who together bring over 40 years' experience in creating Japanese cuisine.
Head Chef Ishi has over 30 years' experience in the industry having worked in many Japanese restaurants across Japan and Australia. In more recent times, Ishi was the resident chef at reputable Japanese restaurant and event precincts in Brisbane.
Specialising in sushi creation Shinataro is the other expert behind The Sushi Factory.
Having mastered the ability of creating sushi in Tokyo at the Sushi Academy, Shintaro went on to intern at several sushi restaurants in Japan as well as completing his apprenticeship. After moving to Australia, he has spent 10 years in Brisbane's most iconic restaurants.
Together this dynamic duo bring to you The Sushi Factory.
